Sweet Potato Hand Pies

  • 2 cups mashed sweet potatoes
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter
  • 1/4 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine the mashed sweet potatoes, flour, butter, sugar, cinnamon, nutmeg, and salt.
  3. Mix until a dough forms. Roll out the dough and cut it into circles.
  4. Add a spoonful of the sweet potato mixture onto one half of each circle.
  5. Fold the other half over and seal the edges with a fork.
  6. Brush the tops with egg wash.
  7. Bake for 20-25 minutes or until golden brown.
