Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix the almond milk, vegetable oil, and vanilla extract.
  3. In another bowl, sift together the flour, baking powder, coconut sugar, and salt.
  4. Combine the wet ingredients with the dry ingredients, stirring until just mixed.
  5. Gently fold in the blueberries.
  6. Pour the batter into a muffin tin lined with paper liners.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.

Notes

  • For extra sweetness, add a sprinkle of coconut sugar on top before baking.
